Description:
Remove the leaves from the basil stems and wash in cold water. let them air dry on a cloth. Put them inside the marble mortar with garlic and salt. Forcefully crush with pestle, add the pine nuts and basil until there is homogeneous, in the last little grated cheese at a time to mix all ingredients. Dilute, directly in the mortar, with olive oil poured wire, stirring until a soft cream.
